For Cinco De Mayo I give you salsa! Bust out the chips, yo!

Looking for a salsa to spice up your Cinco De Mayo? Check out this super tasty/super easy Southwest Salsa courtesy of my AWESOME sister in law Julie. This is my all time favorite salsa. We love her very much but love her 100x's more when she whips up a batch for us to enjoy while waiting for those ribs and steaks to finish grilling.

Julie's Southwest Salsa

1 purple onion cut into thick slices
2 cobs of white corn ( pre- roasted in husks)
2-4 whole tomatoes ( I use beef steak)
1 Mango ( optional)
1 bunch cilantro

Chop up all the ingredients and cut corn off the cob. Toss it all in a blender, puree and pour. Simple and simply delicious! It's a very fresh salsa that's not too spicy for the kids. Trust me, Julie knows Mexican and this salsa is yummy!
