A few clever recipes to help you get rid of those extra Easter eggs
Hard boiled eggs. Oh how we love them and can't get enough of them. However, if your family is anything like mine you probably only consume hard boiled eggs once a year when you go hog-wild boiling up and dying dozens of them for the "big hunt." And even after you're family stuffs themselves with at least a half a dozen hard boiled eggs each on Easter you're shocked to find you're still left with three dozen more. To make matters worse, sick to their stomachs, your family refuses to touch the eggs, let alone look at them, as if they're refusing to acknowledge the eggs that brought them such joy only a day ago even exist. Then what are you left with? Nothing but a bunch of leftover stinky eggs rotting away in your refrigerator.
That's why I'm loving what Kellie over at Little Nummies is doing with all those extra eggies. Check out her posts on hard-boiled egg how-tos. They are cute, creative and sure to get those eggs out of your icebox and into some bellies before they become nasty stink-bombs. So far, she's posted ideas for making a spring flower, rabbit face and, my personal favorite, Rock-in-Roll Bunny. The recipes are whipped up with easily-accessible ingredients most of which you probably already have in the pantry. I can't wait to see what she comes up with next!
