My mother in-law may not be Irish but she cooks! And Guiness ice cream for "kids in bed" after-party.

I'm pretty Irish but can't cook. My mother in-law isn't Irish and cooks like nobody's business. We've been craving my in-laws annual Saint Patrick's Day feast. Unfortunately we've moved far enough away to not be able to attend the event. An event complete with the most delicious corned beef (hey, it's America) and soda bread, a few green brews, and my brother in-law who is the most Irish, non-Irish Mexican I know belting out Irish pub songs while sporting his "traditional Irish garb." Through shameful begging and pleading my very generous mother in-law agreed to divulge her delicious Irish Soda Bread and Corned Beef recipes to me. And from me to you. Now I just have to convince her to come over to our house and cook it!

Irish Soda Bread
 
3 cups flour,sifted
2/3 cup sugar
2 teasp. baking powder
1 tsp. baking soda
1 teasp. salt
1 1/2 cups seedless raisins
2 tab. caraway seeds (optional)
1 3/4 cups buttermilk
2 eggs,beaten
2 tab. oil
 
In large mixing bowl,combine flour,suagr, baking powder and baking soda and salt. Mix together well. Add raisins and caraway seeds. In seperate bowl combine buttermilk,eggs and oil, Add this to flour mixture. Blend until just moistened. Turn into greased 2 quart casserole dish. Bake 350 degrees for 1 hour. Remove from pan immediately. Cool completely before cutting.  (I use Pam to grease casserole)
 
Corned Beef
 
Put corned beef in crock pot around 9:00 if you eat around 5:00 or fix this in large pot on stove. If you do that you can start around 1:00.

Cut up cabbage in wedges
sliced carrot and onion
peeled potatoes. cut in 1/2
couple bay leaves, lightly salt veggies (meat already salted)
cover with water  (enough to cover veggies on top of meat)
Make sure you don't rinse corned beef off when taking out of pkg.You need the spices.
